Every coach’s wife & football mom needs to have a few culinary tricks up their sleeve for days when there’s just not enough time to break out all the kitchen tools.  This is our first year playing under Friday Night Lights, which means very little time between school pick up & kick-off.  This past weekend I needed tailgating snacks that were easy & ready to go, so I stopped by the deli at Walmart where they have hot & ready deli wings in a variety of flavors like Tyson Bone-in Hot Wings and Boneless General Tso’s Chicken.

When it’s comes to tailgating, I have to admit that I feel pretty guilty that my husband, the coach, never gets to participate in all the tasty snacking!  While at Walmart, we opted for the Pick 3 Bucket at the deli counter because I knew it would provide enough food for before & after our game.  For our three, we picked Tyson Bone-in Hot Wings, some mild wings for the kiddos, and a big bag of seasoned potato wedges.  {If you want more or less of something at the deli, you can always just order a plate of prepared food or purchase it by the pound.}  For before the game, we simply paired it with some Kraft Ranch dressing to cut the heat. 

football collageThe girls and I enjoyed quite a spread before heading into the stadium to cheer on our Eagles.  Not wanting the food to spoil {it was 95 degrees at kickoff time in Northeast Florida}, we took only what we could eat and saved the rest for later.  While the game didn’t quite go as we would have liked, it was nice to know that we had some comfort food waiting for us back at home.  And let’s face it, football doesn’t end on Friday nights for a football family!  We had college football on the television, streaming on the iPad, and tuned in on the radio.  Sometimes, it’s really all too much for this coach’s wife turned #GameTimeHero!  

Like I said before, I need food to be easy to prepare these days and mostly because I have a very needy toddler!  While we heated up our chicken wings {simply toss them into the oven on a pan for 10 minutes or so at 350 degrees}, I got out the crockpot to let dinner make itself.

This crockpot recipe is simple if you can operate a can opener — I did it with a baby on my hip!  This is what you’ll need:

  • 1 lb. Tyson boneless chicken breasts
  • 2 cans of Rotel {I used mild}
  • 1 can black beans {drained & rinsed}
  • 1 can sweet corn
  • 2 cans Swanson Chicken Broth
  • 1 can Campbell’s Cream of Chicken Soup
  • 1 can Campbell’s Cheddar Cheese Soup

Add all the ingredients to your crockpot, cover, and cook on high for 6 hours while your husband gets lost watching football.  Leave him in charge of the children {they have snacks – remember the wings & potato wedges?} and go shopping while dinner cooks itself.  

After six hours, I used a whisk to break up the chicken.  Spoon into bowls and top it with cheddar cheese and a dollop of sour cream.  You’ll have happy tastebuds all weekend long!
